Mix It Up Friday Link Up #1: Blueberry Muffins

This recipe is my favorite for Blueberry Muffins!  I love blueberry muffins, fresh out of the oven.  The bread is warm, the blueberries are so soft and the muffins taste heavenly!  
I’d like to share this recipe with you all.  I hope you enjoy it as much as my family and I do!
Preheat the oven to 400 degrees.  Line a muffin pan with 8 paper muffin cups.  Fill the remaining 4 empty muffin spots with water, just covering the bottom of each spot, so the batter will rise evenly.  
Gather your flour, sugar, kosher salt, baking powder, vegetable oil, egg, milk, vanilla extract and blueberries.  In a large bowl, whisk together all the dry ingredients: flour, sugar, kosher salt and baking power.  In a separate bowl, mix the vegetable oil, egg, milk and vanilla extract.  Add the milk mixture to the dry mixture and blend well.  Fold in the blueberries carefully with a spatula.  
Fill the muffin cups with the batter, filling to the top.  Sprinkle just a tad of sugar (about 1/2 teaspoon each).  This will make the muffin tops slightly crispy when they bake.  Bake for 15-20 minutes.
