Mix It Up Friday Link Up #4: Classic Macaroni Salad

Macaroni Salad is a tasty side dish that’s one of my favorites.  My grandmother used to make this.  My recipe tastes almost like she used to make it: smooth pasta, slightly crunchy vegetables and a delicious sauce, all mixed together and chilled until perfection!
Gather these ingredients: elbow macaroni, light mayonnaise, white vinegar, white sugar, prepared yellow mustard, salt, black pepper, onion, celery, green bell pepper and canned pimentos.

Chop the celery, onion and bell pepper.  I use a food processor.

Meanwhile, bring a pot full of water to a boil, then cook the elbow macaroni until done, about 8 minutes.

Mix the mayonnaise, white vinegar, white sugar, prepared yellow mustard, salt and pepper in a bowl.  Drain the macaroni.  Add the macaroni and chopped vegetables to the sauce mixture.  Add the chopped pimentos (I chop them separately since they are more tender than the vegetables) and mix all together.  Chill for about 4 hours.
Ingredients:
4 cups uncooked elbow macaroni
1 cup light mayonnaise
1/4 cup distilled white vinegar
2/3 cup white sugar
2 1/2 tablespoons prepared yellow mustard
1 teaspoon salt
1/2 teaspoonblack pepper
1 large onion, chopped
2 stalks celery, chopped
1 green bell pepper, chopped
2 tablespoons canned pimentos, chopped
Directions:
Bring a pot of water to a boil.  Add the macaroni and cook for about 8 minutes.  Drain the macaroni and set aside.  Chop the celery, onion and bell pepper (I use a food processor).  Mix the mayonnaise, white vinegar, white sugar, prepared yellow mustard, salt and pepper in a bowl.  Add the macaroni and chopped vegetables to the sauce mixture.  Add the chopped pimentos (I chop them separately since they are more tender than the vegetables).  Mix all together.  Chill for about 4 hours.  Enjoy!
